Vietnamese Rolls

Whenever I get sick I crave strong flavours. This week I've come down with a head cold, no coughing just headaches and the like. As such I've been going mad in my house and cooking up a storm to release all my creative juices. This is my take on vegetarian Vietnamese rolls, served with a spicy soy dipping sauce.
First I fried up some tofu, while it is a bit bland tofu is a STAPLE in my diet.
I love crispy tofu! I added a bunch of fresh veges like bean sprouts, cucumber, carrot and capsicum. The crunch of the veges really works well with the soft rice noodles. The hardest part is making the roll, well... roll! Unfortunately mine didn’t work out so well. So no photos of the final piece. I could have pretended and said they were just really good...

But that’s just not my style ;)

I think this sauce is beautiful aesthetically. And taste? Well it was delicious and definetly MADE these rolls.

I combined seasame oil, soy sauce, rice wine vinegar and some chopped chilli and coriander. Perhaps a bit spicier than I had intended but still great!!
